Preparation
- Dissolve 25 g fresh yeast/8 g dry yeast in 1.75 dl lukewarm water. Add the flour mix and 40 g softened butter. Knead all ingredients together in a stand mixer on the lowest speed for approx. 6 min, or by hand until the dough is soft and smooth.
- Let the dough rise, covered, in a warm place for 30 min.
- Knead the dough lightly and roll it into a log. Divide the log into 8–10 equal pieces and shape into buns. Place the buns on a baking tray lined with baking paper and cover with a tea towel. Let the buns proof in a warm place for 45 min. While the buns are rising, preheat the oven to 200°C fan.
- Brush the buns with water, egg, or milk and bake for 14–16 min until golden.
