Preparation
1. Dissolve 25 g fresh yeast / 8 g dry yeast in 3 dl lukewarm water at 35°C. Add the flour mix. Knead all ingredients together in a stand mixer at medium speed for about 6 min, or by hand until the dough is soft and smooth.
2. Shape 6–8 rolls, press them flat, about 1 cm high, and place them on a baking tray lined with baking paper. Let the rolls rise for 50–60 min, covered, in a warm place.
3. Brush the rolls with water and bake for 30–35 min at 180°C (fan).
